I’d like to use this blog-like section of the website to showcase different recipes my family and I make using our homegrown microgreens. Now, I’m no chef, but I do enjoy cooking delicious and unique meals – at least when time permits with 3 toddlers! I hope that these dishes might inspire you or give you some ideas on how to use your microgreens as well 🌱
Here are the ingredients you’ll need to make these jumbo shells:
- One box of jumbo-sized pasta shells
- One can of any tomato sauce variety
- Shredded cheese
- 1oz Broccoli microgreens – any thin variety would work great, including any of the salad mixes
- Butter, oil, or non-stick spray
- 1 large cooking pan
- 1 large pot of boiling water
Once you have all of your ingredients, you’re all set. These are super easy and quick to make, yet this recipe produces plenty to feed the whole family and even have leftovers.
- Fill your pot with water and heat until boiling
- Once your water is boiling, cook the pasta shells until soft and tender
- Drain the water from the shells and set them aside
- Pre-heat the oven to 350°F
- Finely chop your microgreens of choice – this will allow them to sit better inside the shells
- Grab a small bowl and pour some shredded cheese and your microgreens into it. Give them a good toss with your fingers to mix them together
- Spread your butter or small amount of oil along the edges of the cooking pan just to make sure nothing sticks when baking
- Pour some of your tomato sauce into your pan and spread evenly to create a layer for the shells to sit in
- Hopefully the shells are cool enough by now to grab so that you can start filling them with your cheesy microgreen mixture
- Fit as many as you can in the pan face up and admire your creation
- Before you put them in the oven, you can lay another layer of sauce and cheese over the shells if you like (the more sauce and cheese for me, the better)
- Bake your pan of shells for 20 minutes and enjoy after cooling!
And that’s pretty much it! These go great with a side salad (in which you can also use some microgreens) or some garlic bread.
